Lemon Poppy Seed Muffins

  • 1-1/2 Cups Flour
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 1/2 Cup Maple Syrup or 3/4 cup white sugar
  • 1 Medium Egg
  • 4 Tbsp Butter Melted
  • 1 Tsp Vanilla Extract
  • 1 Cup Greek Yogurt (Full Fat) or Sour Cream

Strawberry Glaze

  • 12 Strawberries Finely dice
  • 2 Tbsp Maple Syrup
  • 1 Tbsp Greek Yogurt

Lemon Poppy Seed Muffins

  1. Preheat oven to 350 degrees. In a bowl mix all dry ingredients: flour, baking soda, baking powder, and salt until well combined.

  2. In a separate bowl mix maple syrup, egg, melted butter, vanilla, and Greek yogurt until well combined.

  3. Mix wet ingredients into the bowl with the dry and mix until just combined and all ingredients is now wet. Do not over mix or the muffins will not be as light and fluffy!

  4. In a greased muffin pan or a silicon muffin pan pour an equal amount of the mixture into each cup (12). It's about 2 tbsp of batter per muffin cup.

  5. Bake in the oven at 350 degree for 20 minutes or until a toothpick comes out clean.

  6. Cool on a rack for at least 20 minutes before adding the glaze.

Strawberry Glaze

  1. Chop and finely dice the strawberries. Combine with maple syrup and Greek yogurt in a blender and puree until smooth, about 2 minutes.

  2. Pour glaze over cooled muffins and enjoy!

Recipe Notes

Be sure that the muffins have fully cooled before adding the glaze. If the muffins are still warm the glaze will just soak in and give you a squishy muffin!
