Sheet Pan Tilapia and Veggies

Quick and delicious this sheet pan tilapia is the perfect busy weeknight meal. From start to finish you can have it on the table in less than 30 minutes!

  • 2 Tilapia Fillets
  • 2 Tbsp Olive Oil Divided
  • 1 Yellow Squash Diced
  • 2 Cups Broccoli Chopped
  • 1/2 Cup Grape Tomatoes Halved
  • 1 Tbsp Fresh Dill 1 tsp dried
  • 1/2 Tsp Salt
  • 1/2 Tsp Pepper


  1. Preheat oven to 425 degrees. While oven is preheating prepare the vegetables and add to a medium sized bowl.

  2. Pour half of the olive oil over the vegetables along with half of the dill, salt, and pepper. Stir to make sure all of the vegetables are evenly covered.

  3. On a sheet pan lined with parchment paper or foil spread out the vegetables in an even layer, leaving space for the tilapia fillets.

  4. Pat the tilapia fillets with a paper towel to dry and coat with the remaining olive oil on both sides. Season both sides with the remaining dill, salt, and pepper. 

  5. Place the tilapia on the sheet pan with the vegetables and place in oven to bake for 15 minutes or until tilapia is fully cooked through and flaky.

  6. When vegetables are tender and tilapia fillet is opaque (no longer transparent) remove from the oven and serve immediately.

This recipe reheats well and can be refrigerated for up to 3 days.
